Hey y’all! Since I’m leaving for Indianapolis tomorrow morning, I thought today would be the perfect time to share my homemade acai bowl recipe! My mom made me one of these every morning back in high school, and to this day, they’re still one of my favorite vegan meals! They’re fresh, fruity, filled with tons of vitamins and minerals, and are absolutely delicious! So, without further ado, let’s get into the recipe!
What You’ll Need:
ACAI BLEND
- 2 frozen acai puree packs (the sambazon blend is my favorite!)
- 1/2 frozen banana (or 1/2 room temperature banana with 1/2 cup of ice)
- 1/4 cup unsweetened almond milk
- 1 handful of spinach
- optional: 1 drizzle of agave nectar (only recommended if using unsweetened acai packs)
TOPPINGS
- 3 strawberries, sliced
- 1/2 banana, sliced
- 1 kiwi, sliced
- 1 handful of blueberries
- 2 tbsp coconut flakes
- 1/4 cup muesli
- 1 tbsp hemp hearts
- 1 tbsp chia seeds
Instructions
Run acai packs under lukewarm water for 15-30 seconds. Using your hands or the edge of your counter, break them apart into a few pieces. Slit open the top edge of each pack and add the acai puree to your blender. Then, add frozen banana, spinach, and agave for extra sweetness (in that order).
Turn blender on food chop (or low, if you don’t have this feature) until partially blended. Then, turn blender on medium until smooth. While the blender runs, slice the fruit for toppings. If blender stalls, turn it off and use a spoon or spatula to mix the ingredients around before turning it on again (you can also add another splash of almond milk, but keep in mind this will make the consistency thinner).
Once the acai is completely blended (you’ll know it’s ready when you no longer hear any crunching noises while blending), pour into a bowl. Add toppings, and enjoy!
Just a note – the more you make these at home, the less you’ll need to pay attention to measurements. It’s not super precise, so if you add a little more or less of something here and there, don’t worry about it!
